If I roll on the throttle lightly the transmission engages perfectly fine in all gears. However, if I fully open throttle in particularly 5th gear if I give it some gas the bike revs up and it takes a second for the transmission to fully engage and transfer power. Most common times I notice this would be merging onto highways and trying to use full power. It will slowly climb in speed and then suddenly you can feel it fully engage and finally pick up speed at a much better rate. Any recommended additives I can throw in the oil to alleviate this or any adjustments I can make?

Bike is a 09 VL800 C50

No. Do not throw additives in the oil!!!

If the clutch is slipping, it could need a full adjustment (do a search for full clutch adjustment or just look for the sticky in Motors Transmissions and Drives), or a replacement of the clutch and springs.

Time for a clutch rebuild. Not a hard job. Just make sure you have a torque wrench and use it. Those brass bolts sheer of really easily. Trust me
