I think I may salt and cracked pepper them and when they are done grilling to about medium rare slather them in butter.
Or reverse sear them in the smoker for about 2 hours.
Most all those juicy steaks you get out are slathered in butter. Just an FYI. I know you're pretty slick but in case you didn't know....
That sous vide method you mentioned using the Anova Precision Cooker looks interesting and I would like to try it but already have a bunch of cooking toys. Cheapest one on eBay is $129 unless you know of knockoffs.
